Breakfast Quesadillas

Ingredients

8 slices Sprouts Old Time Butcher Block Turkey Bacon
6 Good Eggs
1 jalapeno pepper
8 oz Lifetime Fat free Cheddar Cheese, shredded
1 shallot

Directions

Mix Eggs, chopped shallot and chopped jalapeno together until mixed and scrambled. Use favorite spices.
Bake turkey bacon at 375 for 30 minutes until crisp. Chop.
On each tortilla, layer with cheese, bacon, egg, and some more cheese. Fold over tortilla. Repeat for all.
Crisp on both sides. Serve with salsa if desired.
