Chicken Cheese Steak Tacos

Ingredients

  • 1 lb. boneless skinless chicken breast
  • 1 tbsp. olive oil
  • 1 tsp. garlic powder
  • Salt and pepper
  • 1/2 onion, sliced
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 1 cup part skim mozzarella cheese
  • 8 corn tortillas

Directions

  1. If the chicken breasts are very large or thick, cut them into strips or thinner cutlets so they cook more quickly and evenly.
  2. Brush the chicken breasts with olive oil and sprinkle with garlic powder, salt, and pepper. You can also add some red pepper flakes if you like things spicy. Spray the peppers and onions with cooking spray and sprinkle with salt and pepper.
  3. Place chicken and vegetables on the grill. Cook for 4-6 minutes on each side or until chicken is cooked through and vegetables are tender.
  4. Roughly chop the chicken and vegetables. Toss with cheese and if needed, place in microwave to melt cheese. You can also place it on a piece of foil sprayed with cooking spray on the grill to melt the cheese.
  5. Heat the tortillas on the grill until warm and fill with chicken mixture.
