Rashers and Chicken Sandwich (aka Leftover Sandwich)

This was actually pretty damn good!

Ingredients (Leftovers):

4 oz chicken tenders
3 slices english rashers
2 onion rolls
1 jalapeno
1 roma tomato
1/2 oz hot sauce or tabasco
1/3 cup light mayo
1 jalapeno
.2 lb campino quesadilla cheese

Directions:

Cook tenders and rashers in same pan until done.
Slice up both with pizza cutters to diced consistency.
Dice Jalapeno, mix with mayo and hot sauce.
Put cheese in pan and melt for 5 minutes. Mixing as you go and adding seasonings of choice. Remove from heat.
Divide, put on sandwiches, top with tomato and Jalapeno Mayo.
