Crock-pot Chicken Cacciatore

Ingredients

  • 6 chicken breasts filets (or 3 chicken breasts cut in half lengthwise)
  • 1 yellow or sweet onion, diced
  • 1 red bell pepper, seeded, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon kosher or sea salt
  • 2 (14.5 ounce) cans fire roasted tomatoes
  • 1/4 cup balsamic vinegar
  • 1/4 cup freshly chopped basil
  • 1 teaspoon ground oregano
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup freshly grated parmesan cheese
  • 4 oz. reduced calorie spaghetti

Directions

  1. Pour 1/2 cup of the diced tomatoes in the bottom of a 5-6 quart slow cooker. Add the remaining ingredients in this order: chicken breasts, onion, bell pepper, garlic, black pepper, salt, remaining diced tomatoes, balsamic vinegar, basil, oregano, and red pepper flakes. Cover and cook on high 4-5 hours or low 6-7 hours.
  2. Sprinkle parmesan cheese on top of chicken before serving.
