Viking’s Pumpkin Chocolate Chip Cookies

Ingredients

  • 2 sticks butter
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup canned pumpkin puree
  • 3 cups all-purpose flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1 bag chocolate chips
  • 1 bag Pecans

Directions

  1. Heat oven to 350 degrees. Spray cookie sheets with nonstick spray.
  2. Using a mixer, beat butter until smooth. Beat in white and brown sugars a little at a time until light and fluffy.
  3. Beat in eggs 1 at a time, then mix in vanilla extract and pumpkin puree.
  4. In a large bowl, whisk together flour, baking soda, salt, and spices.
  5. Slowly beat the flour mixture into the batter in thirds.
  6. Stir in the chips. Scoop the dough by heaping tablespoons onto cookie sheets to bake 15 to 20 minutes, or until brown around edges.
  7. Rest for two minutes before removing from pan.
